What's quick to prepare, tastes great and doesn't involve a bunch of bread or empty carbs? Tuna Salad is just the ticket. Take a can of tuna and drain the juice/water, add mustard, a touch of low fat mayo, season to taste (salt, pepper, etc.) add celery and black beans if you have them. Slice several cherry tomatoes and there you go. A great lunch that is loaded with protein and great taste.
Here is a TIP FROM A MAN... pretty much every sandwich can be made into a salad. Before I cut way back on eating bread I used to order a popular sandwich at a local sandwich shop. Now when I go there I get basically the same thing only it is chopped up as a salad with more lettuce and no bread. Same great taste. It's just that easy.
